Since low voltage cable Is not permited to be run through walls, cabinets, etc., how could the transformer be remote mounted so It could power several lights throughout the room? It seems a little ridiculous to have to mount it in or under the cabinet. Also you would have to purchase several transformers. Anyone out there ever have this problem?

You can mount the transformer remote there is nothing in the NEC that forbids this.
But you have to use a wire method that is acceptable from chapter 3 this means that you can use N/M, conduit, FMC etc...
