Will a recess can with a shower trim i.e. glass covering the bottom of the trim meet the definition of a enclosed fixture when looking at 680.22 (B) (2).

It depends on how its listed. What does the instructions and catalog say? You have to use the correct trim and lamp, it may need to be GFCI protected. The trim may need to be non-metallic
