coming from a fused 100 amp knife disconnect fused at 80 amps i have a 240 100 amp plug wired with #2 awg wire also i wired a 30 amp plug W/ 10 awg
both are 3 phase ive been told i am not in code because the 80 amp fuses are too big . ive thought because you cant plug anything larger than 30 amps into the receptical 10 awg wire is ok do i need overload protection at 30 amps also?

Protection for the #10 itself would be determined by the tap rules of 240.21, but all of them would require the wire terminate on an overcurrent device that would protect the wire from overload.
Also, 210.21 requires that receptacles be rated in accordance with the branch circuit protection.

Short answer, with a few exceptions, your #10 wire and 30 amp receptacle require 30 amp overcurrent protection.

In addition to the #10 not being properly protected, I think your 30A receptacle connected to your 80A branch circuit would be a violation of 210.21(B)(3).

edit: Just noticed that Gus made the same point.
