On my outside AC compressor and fan, I did that to get them to start over a weekend. On Monday went and got the correct size. Voltage was a match though, just cap values were different.

You can go up on voltage not down. Bit more on mfd may not hurt but less and you might not start soon enough to prevent winding damage. Put proper mfd in as soon as you can. Ask customer if they can wait for correct one.

If you are asking about a start capacitor (usually 70 mfd or higher) the voltage needs to be right but the mfd can be +/- 10 percent. If you are asking about a run capacitor( below 70 mfd) then the voltage can be higher but the mfd needs to be exact.
