Actually you can use it in direct contact with earth if you meet the requirements of 358.10(B)

Do they sell the pipe and fittings with corrosion protection, or is that something you add by spraying on a substance or something similar?

For slab on grade, we used to coat the emt with lap seal and pass. We used to tape using 3M electrical tape and that passed inspection as well, but it sure took longer. This was back in the day that pvc was the new thing that was having a bit of a hard time catching on with the inspectors... I haven't used emt at grade level in a long time.

So yes, it is galvanized, but not enough for corrosion protection.

Galvanizing is corrosion protection, without any galvanizing EMT would rust very easily just like any other non coated steel. It apparantly does not have enough galvanizing for protection from continuous contact with soil, or other places where saturated material will collect. GRC and IMC will rust also like in underground installations, they have a thick enough wall that unless severe corrosive conditions are present the outer layer of rust plus the galvanizing help keep the rest of the thickness from rapid deterioration. EMT has a thin enough wall that it doesn't take nearly as long to deteriorate to a point that it is totally compromised. JMO.
