Friday I will wire up one of these thankless water heaters.

The 24 Plus Spec sheet has it using 2X50A

Min breaker 2X60, Recommended wire size #6 though the manual reads required #6. The manual also refers to using cable.

* Non-continuous load*

The wire lengths will be less then 10'

I will be using FMC and THHN for this install.

Would not #8 THHN and 50A breakers work for this setup?

I called tech support, no help there.

Sounds like the 50 amp OCPD and #8 conductors would work but you still need to follow any instructions that are part of the listing.
