To answer your question the requirement to keep metal water pipes electrically continuous was removed in the late 1970s or early 80s

Just think available fault current path from any metallic surface subject to becoming energized.

Appropriately sized conductor "bonding jumper" to effectively carry any fault current safely back to source without subjecting harm to anyone coming into contact with the metallic parts.

Makes sense to bond ALL metal piping and ALL metal surfaces
