Running SE indoors, not through insulation, currently on 2011 code. Can you put 4/0-4/0-4/0-2/0 SE cable on a 200A breaker if the panel manufacturer doesn't make a 180A breaker?

That only applies if there isn't a standard breaker size?
The calculated load is 180 or less then you can use the 200 amp breaker. There is no 180 amp breaker( art. 240.6(A)) as a standard size so 240.4(B) allows use to go up if the load is not more than the ampacity of the conductor.

Ok, I see where my confusion was. Sometimes different things run into each other and I forget which one applies when or where- if that makes sense.
