Is there a listed connector approved for use in terminating a larger conductor in a terminal lug?
you can also get splicers that can reduce in size.
Why do you need to ask the ahj? It is compliantGuess I need to ask my AHJ before proceeding.

Why would you want to do that? As the others have noted the are methods of accomplishing this as the others have noted.
But more importantly why was the 2/0 used in the first place? Was it selected because of voltage or creating?
Then was it selected because of a derating issue?
In addition the terminations are UL486 which involves temperature rise and pull tests. The question is if the adapter suggested listed for use with the terminal?
Lets keep creation and religion out of the forum please
And remember, the NEC does not mandate intelligent design.Groan....
