One more question though. What is the correct way to calculate the half winding current rating? Should it be (full winding kVA rating/2)/115V?
That would be conservative (but use 120 volts if that is the nominal voltage listed for the transformer), since the winding would be carrying that current load if it were a balanced full load.
In practice you can often get away with running a half winding some percentage higher than half of the rated full load since there will be less heat generation from the other half winding which is on the same core and so contributing to the same heat dissipation problem.
There will also be less heat contributed by the primary winding if there is a reduced load on one half-winding of the secondary.

The problem is that unless the manufacturer specifically provides that rating factor, you have no way of knowing how far you can go and therefore will need to fall back on the conservative calculation, especially for continuous loads.
