208 and 240 Volts

Lets say there is a bunch of equipment that needs to be hooked up (such as agitators, bottlers, pumps, grain mills, and I-stills) and it all runs on 3 phase 220. A new panel will be added for all this equipment. There is a spare 120/208 transformer lying around, not being used. Could this possibly be used to run this equipment (to make panel 120/208 instead of 120/240), or do I need to spring for a 240 volt transformer?

What is the source of your 120/240?
A transformer cannot convert single phase to three phase .

The primary feeding the transformer is 277/480, 3 phase.

Just wondering if it is common for equipment with nameplate rating of 220/240 to run on 208

Motors sometimes, heating equipment often. You have to calculate the performance change and see if it is acceptable, and check with manufacturer for warranty issues for systems.
