I would like to run this by someone other than me. I am going to add a sub-panel and I?m not sure if my calculations are correct.

Room addition with kitchen remodel:

Room addition 540sqft x 3= 1,620

Kitchen SA 2 x 1500= 3,000

Refrigerator 1500= 1,500

Microwave 1500= 1,500

Island SA 1500= 1,500

Can Lt. in Rm add. 8 x 60w= 480

Freezer 1,500

Total 11,100 3,000

8,100 x 35% 2,835

Total 5,835

Double Oven 7.2KW= 7,200 x 100% 7,200

Total 13,035

13,035 / 240

Total 54.3125

Breaker amp for Sub panel 60 amps

Any input of this will be greatly appreciated.

You've overkilled, looks good.

One thing - I always use the max size lamp a can is rated for. Usually, this is around 75W. :)

But you've accounted for several SA circuits which more than compensates.

Were you thinking you were too high or low?

This is the first time I have attempted to do a calculation like this. I wanted to see if I was on the right track. I just wanted to make sure I did not undersize the new sub panel.

FWIW, I didn't look at it from a minimalistic NEC calculation standpoint.

Double Oven 7.2KW= 7,200 x 100% 7,200
I think you could have hit this at 80% x 7200, per the range table.

I just wanted to make sure I did not undersize the new sub panel.
I think it'll work fine. :)
