Short answer: No such requirement in the NEC.
Article 518 does require metallic raceways for assembly areas with occupancy of 100 or more persons.
But there are exceptions to that depending on the fire rating of the building.
The exact answer requires a review of Art 518 as well and a review of the applicable building codes and construction details.

Key words in there. Just because a building contains an assembly area doesn't mean the entire building is an assembly area.

Hotel with a convention center - the convention center portion might be the only part that contains an assembly area.

Along with what you mentioned, fire ratings can form boundaries to said assembly areas or lack of them can extend the assembly area.
