I need to re-wire my own portable pizza oven. What type of wire should i use? I found the type of heater cord in article 400.4 for the flexible cord and plug. Do you also know the type of connectors to use? The oven thermostat has a setting to go to 500 degrees F. Thanks.

I have seen similar applications where "Thermoset" wire was used. It has very good high temperature performance and durability. There are probably other types that may be better suited. :)

most ovens use PFA type wire.

as for connectors, any crimp-on should be fine i would think. you may want to remove the plastic sleeve after you crimp it.

Are you putting the cord inside the oven?

Just because the oven has a maximum temperature of 500?F doesn't mean the cord will reach that temp.
