Does gouging of stranded conductors during wire stripping have any adverse affect on operation?

It does not have an enormous effect on current carrying capacity, but it makes it much more likely that strands will break from flexing or vibration over time. Eventually the problem could become serious.
And what does the back hidden side look like? More nicks?

Really depends on the load, most conductors are oversized for the load they serve so it's almost never an issue. Still not good workmanship, obviously.
