On four of my rooftop package units there is a grayish coating applied to the armored cable. Can anyone identify what it is? Is there a NEC code for it? or Is it just a good practice intended to weatherproof it?

What you are describing is likely "Liquidtight Flexible Metal Conduit." It is a common raceway used for its flexibility and protection from liquids.

It could be parking deck MC cable. Does it look like this?
