Can I run a 12/3 UF with a ground to a detached garage used only for parking a car? If so can I use the ground in the 12/3? I seem to remember detached garages can only have one circuit unless you set a sub-panel. Still not sure if I need a ground rod.

You can use the 12/3 uf as a MWBC, NEC considers a MWBC as a single circuit. A double

pole switch can be used as the disconnect, no ground rod required with this set-up.

Yes you can but i highly suggest pvc conduit. Your depth will only need be 18 inches and if you ever need more circuits you save digging and also think about if the uf gets damaged.
If all you need is a light and garage door 12-2 would be enough.
