New service install questions

Hi folks, new to the forums. Bringing a 100 amp service to my new garage and just wanted to get some input. Just to give a rundown of the project, I have an existing meter base that used to feed a horse barn that is no longer used and I plan use it to feed the panel in the new garage. There will be a 100 amp main breaker just below the meter going to pvc conduit, switching to RMC before ground level, then switching back to pvc out of ground level at the garage. I will be running 3-#3 thhn and 1-#8 thhn for ground. The ground rod is located at the base of the light pole. The soil is half clay/half dirt hence the reason for RMC so I can use a min. 6" cover. To bond the RMC would I be ok with one clamp at the pole side going to the ground rod or do I need a clamp/rod at both ends? Please correct me if I'm wrong but the wire size/type should be sufficient. Also I couldn't find much information on this, but looking to use a threadless coupling on the buried RMC.
