I am a electrician of over 15 years and understand electron theory, and ohm's law. I am outstretching my knowledge base by entering low voltage. Can some one direct me where I can learn what actually travels thru cat5 cables. Thanks for any help.

I assume you mean cat5 carrying Ethernet, not something else. In this case, Google is your Friend :D. Or possibly http://en.wikipedia.org/wiki/Ethernet_over_twisted_pair, which might lead to http://en.wikipedia.org/wiki/Ethernet_physical_layer.

The varieties of Ethernet over twisted pair use different electrical signals depending on speed (10/100/1000Mbps). For more info, you have to decide whether you're interested in the electrical signal levels and encoding, the bits and frame formats, or higher levels of the network stack. To a certain extent, unless you're designing the equipment, you don't need to think about the very low level stuff like electrical levels, just about the limitations.
