Can anyone tell me what insulation I need for MTW conductors between a 40 amp/24 VDC power supply and the loads (control relays, PLCs, ethernet switches)? Should I use MTW with 600V insulation or 300V insulation?

The insulation needs to be rated for the highest voltage in the enclosure, cable, raceway, etc.
Example....If you have any 480V equipment in the same enclosure, etc with the low voltage, the insulation on all of the conductors in that enclosure needs to be rate for at least 480V (600V).
Read 300.3(C)
