How to connect dimmable under-cabinet lighting

In my last thread about under-cabinet lighting we determined:
1. Receptacles inside or behind cabinet GFCI is not required yet.
2. Recep under cabinet or in cabinet facing down within 20" of counter must be GFCI protected.
3. Normal receptacles should not be fed by dimmer.

So how should we connect dimmable under cabinet lighting that comes with standard 2 or 3 prong plug without losing the UL listing etc?
Just cut off the plug, feed through an NM or bushing into the box?
Are we even allowed to put the cord into the box since the wires are not approved for use in raceways or is it allowed because they are "fixture" wires?

Wayne mentioned plugs and receptacles that are approved for use with dimmers but I'm guessing they'd cost more than the lights and dimmer, and in scenario 2 they would still be within 20" of the counter so would they still require GFCI or not?

How about plug-in dimmer modules? They plug into receptacle and use receptacle for lamp. Would they generate too much heat inside cabinet? (Unfortunately they're also expensive)

For dimmable applications hard wire is the way to go IMO. You don't have to worry about recptacles and GFCI protection.
