Does a residential ceiling fan need a wall switch

I'm adding ceiling fans in room that don't have them.
The fans come with remotes. Do I need a wall switch to cut power to change lamps.

A ceiling fan is an appliance. Supporting them is detailed in 422.18 and the disconnect would be covered by 422.31, but the disconnect requirement is the same that you mentioned.

If the built-in lights or any other light sources are above the blades it can create very annoying strobe effects.

You can get some not-quite-as-annoying effects from the shadows on the ceiling...
