A little rusty on this but if I am hooking up an a/c unit I need a breaker for the supply wire then I need a fusible disconnect at the a/c unit or just a disconnect no fuse? This is will be in a restaurant.

If the label on the AC specifies fuses, you must use fuses. If it says fuses or breaker, the panel breaker is adequate, and youy can use a non-fused disconnect.

Most of your modern ones. You would just need the disco, non fused.
The fuse is for overload protection. Which most motors have built in.
Of course you would have to go by the name plate requirement. And the breaker listing.

Remember if it's on the roof you may need a service GFCI outlet within 25' from what I recall.

No matter if it is on a roof or not, it needs a receptacle within 25 feet.

Don't sweat that, I find myself forgetting basic stuff all the time. Funny part is the obscure stuff like what can be found in the white book tends to stick with me for a long time, but basic chapters of the NEC I have to go back and re-read more or less on a constant basis. :-?
