I am installing a 600 amp single phase surface for a seasonal food service building. Is it acceptable to use three residential style SqD Q0 200 amp 40 space load centers or is it necessary to use a commercial version? Naturally both exceed the possible fault current withstand rating of 14,500 volts.

There is nothing in the NEC that would prohibit you from doing so.
