In our kitchen at the stadium we have a double steamer fed with 3-#2 from a 100amp 3p breaker. We are replacing it with two individual steamers mounted on a common rack that pull 42amps each @208v 3ph. Can we simply tap off the #2 conductors and feed each steamer or do we need to mount fused disconnect switches ahead of the steamers? The location is not within sight of the panel.

You will need to have a fused disconnecting means installed before the steamers.

The branch circuit taps discussed in 210.19(A)(3) Exception only apply to household ranges and cooking appliances.

We do a lot of this type of work for a large organic supermarket here in NYC. We usually put either an enclosure with a 3 pole 50A in it for each one or if possible, a fused disconnect for each. We'd do more fused disconnects but the supermarket doesn't like having that out in the open.

A small sub-panel would be easier and cheaper than making taps and wiring two disco's.
