Haven't found clarity on 220.56

I have been spending a lot of time looking into article 220.56 and what equipment to apply the demand factors to. I want to run this by anyone that's interested to see if I am telling my students correctly. I have also seen many old posts that are now locked that were actually wrong by my interpretation of this article.

Kitchen Equipment First of all by the heading the equipment MUST be in the kitchen of a non-dwelling unit. I saw a post that someone applied this to water heaters in an apartment building that supplied a bathroom. That was wrong.

Second, I have seen posts where individuals thought that the freezer and coolers were not included. The code states "all equipment that has either thermostatic control". Why wouldn't you apply the demand to those loads also. No other code that I have found in 220 or 430 amends that or superseeds that.

What equipment should be have the demand applied and what equipment should be taken at the full VA?
Any opinions would be greatly appreciated.
 
If it has a thermostatic control, it can be included in the group for which the demand factor is applied. If it is used intermittently, it can also be included in that group. So I would include the dishwasher (it is specifically listed) and the garbage disposal (it has intermittent use) and a point-of-use water heater (it has thermostatic control). But a restaurant or hotel kitchen will have other large appliances (mixers, slicers, grills, etc.) that could also be included, if they are hard-wired.
