When calculating kitchen electrical range/oven loads the study book does not treat these loads as continuous loads. By definition a continuous load is a load sustained over 3 hours. Does not an electric oven see more than 3 hours of on time? Therefore, in addition to using demand table 220.55 should we not add an additional 25% to the calculated load for conductor and breaker sizing?

The elements of an electric oven kick on and off many times during the cooking cycle therefore an electric oven is not considered a continuous load and no additional 25% need be added for the load calculation.

Yes, what Chris said, plus it says "maximum load".
Even if one or more stove elements run for four hours without having the oven element AND the oven light on we won't cross the threshold to require 125%.
