NM replaces MC?

You need to look at the construction types in 334.10. If you have hung ceiling the point is moot because you cannot use NM above a hung ceiling in a commercial space.
 
As Rob states, there is no simple "can" or "can't".
Is it a Place of Assembly (see Art 518) ?
Beyond that refer to 334.10 as he stated. You have to determine if it's a Type III, IV or V construction.
 
Besides what's been said, the one thing you will have to watch for is the client changing their mind on the ceiling type.

The job sounds like it's very fast and to loose to be nailed down by a comment.

You are equally at the mercy of the AHJ and the owner. While the AHJ will give you a determination, the owner can still change their mind...

As others have said it depends on the type of construction. You also will need to look at any local requirements that may override the NEC. We have one jurisdiction in our area that prohibits NM cable in any building other than a dwelling, regardless of construction type or it not being a "place of assembly".
