If you thought the making of chips and French fries was simple?
I have the privilege of putting in lighting at a load out area for the shipment of potatoes for your snack food eating pleasure. We will be increasing the lighting level anywhere from 3 to 10 times what it was. I was informed today that the areas where potatoes sit for a few days at a time prior to shipment need to have less lighting to prevent them from turning green. I guess you guys don?t like green chips. Easy enough to switch the fixtures from 2, 4, or 6 lamp as needed but I was wondering if anyone knew just what color(s) of the spectrum causes this problem. Would a change in the lamp color lessen the problem?
