On a Dranetz PX5, if you were connecting to a Wye system without a neutral available, would you connect as a Delta or a Wye and ground what was to be the neutral connection on the meter?

Delta. Most all I deal with is HRG, so that is my normal connection. The rest of this you already likely know:

Jump the white input up to the next phase. Just connect the three phase leads to the system. I always check the jumpers real close. Looks real easy to connect across a phase. The PX5 will recognize as delta connected.

One of the nice things about a PX5 is the inputs are all isolated. As long as it knows the connection, the firmware will do all the calcs and phase shifting to give you the correct readings. Any imbalance from ground fault will show up.
