On a critical care branch circuit for a nursing home, is the wiring required to be hard piped or is the use of hospital grade MC acceptable?

Also if the patient bedrooms being served are existing rooms and have existing walls would the use of Hosp. MC be acceptable to be routed through any existing walls for power and lighting?

See 517.30(C). This section will also refer you back to 517.13(A) & (B) when installing branch circuits in patient care areas.

I have read these articles prior to posting, the grounding requirements of 517.13(A)(B) are met, so that leaves 517.30(C)(3) which says that metallic sheated cable may be fished through existing walls. So would it be fair to say that hospital grade MC may be used partially within the critical care branch circuit in an existing wall application?

Correct.

Be aware that the AHCA (if this falls under their jurisdiction) may have a different rule (or warped interpretation) though.
