Prefab Commercial Kitchen Calculations

First post here, or I think it is.

In doing load calculations for a project, I was sent this in addition to the permanent building. It is meant as a temporary kitchen on site during construction for a 5 years project. My question is: If this is a prefab kitchen, and the manuf. says to provide the following connections (see below), do I apply Table 220.56? The manuf. did not include how many appliances or sizes...just connection. However, this is a larger kitchen with a lot of appliances. Do I calculate at 100%, assuming the kitchen manuf. has already taken demand?

From Vendor:
Connections for Large Kitchen:
● 2x400A 460V 3 phase
● 1x200A 208 3 Phase

Connection for Walk in Freezer:
● 1x100A 208 3 Phase

Connection for Walk in Cooler:
● 1x100A 208 3 Phase

Connection for Restroom/Changing Room
● 1x100A 120V 1 Phase

How big is this “kitchen.”
It sounds like “Large kitchen” is greatly oversized but not enough info to say for certain. The others seem patently ridiculous.
 
I personally never assume the option that works well for me (I'm almost always wrong) and would assume that they have taken a demand calc on the line panels. Either ask them what their connected load is on those two panels, or add it up yourself based on the equipment list, and then use either 220.88 or a standard Part III feeder/service calc.
