For a 120/240v, 4 wire, three phase service, can i get three pole breakers that can serve three phase loads? How does this three phase service work?

a 120/240V system as stated, is a single phase three wire system. Please correctly restate the voltage you are describing so we can ensure the best answer to your question.

If what you meant is a 240/120 V delta system, then yes, you can run three phase loads from this system using 3 pole breakers.

Sounds like a delta secondary, with 240 volts from phase to phase, and with one phase having a grounded center tap. That gives you 120 volts phase to ground (available only from the winding that has the center tap). You can use a three phase breaker to serve a 3-phase 240 volt load.

This commonly called a 4 wire Delta service which would have a center tap on one of the transformer winding.
