I know I won’t get 240volt and any multiwire I got to turn into one circuit. But other than that can I splice in a panel and feed A and B off the single 120 volt line coming into the cabin.
I could stager breakers but the panel he has does not have a lot of spaces leftovers.
I could group some circuits but would be easier the other way.

Assuming you are talking about a stand alone system. The following was added to 710.15 in the 2023 code.
(C) Single 120-Volt Supply.
Stand-alone and isolated microgrid systems shall be permitted to supply 120 volts to single-phase, 3-wire, 120/240-volt service equipment or distribution panels where there are no 240-volt outlets and where there are no multiwire branch circuits. In all installations, the sum of the ratings of the power sources shall be less than the rating of the neutral bus in the service equipment. This equipment shall be marked with the following words or equivalent:

WARNING:
SINGLE 120-VOLT SUPPLY. DO NOT CONNECT MULTIWIRE BRANCH CIRCUITS!

The warning sign(s) or label(s) shall comply with 110.21(B).

that label is only required if you feed the panel with both A and B with a single 120 volt sports correct.
If you stagger them and put everything one side then that label is not needed?
