Im bidding on a 1600 amp 208 3 phase 180' run for a sub panel
1. Wire sizes?
2. Conduit size?
800amp 35' run 480v
1. wire size
2. conduit size

1600 amps -- you will probably need to run 5 conduits with 400 kcm aluminum. Use your Table 310.15(B)(16) to determine which way would be the best way to go. You will probably need 3" pvc or larger if you decide to do less run

Is this overhead or underground? Assuming it's overhead and indoors we would use the following:
1600 amps- 4 sets #600 kcmil copper in 4" EMT
800 amps- 2 sets of #600 kcmil copper in 4" EMT

Another option for smaller wire to deal with.

1600 AMPS
6 sets: 400 kcmil copper, with 4/0 AWG EGC
3" conduit
Good to 206' length

800 AMPS
4 sets: 4/0 AWG copper, with 1/0 AWG EGC
2.5" conduit

Anyone ever use MC in these sizes for a similar use? How does it compare cost-wise and labor-wise?

As has been mentioned, first thing that came to mind was you likely need to custom order with EGC sized to your application. Unless you are buying an awful lot of cable probably not going to be worth the cost unless maybe what you actually need is stocked somewhere.
