I am going to put in 2 range recepticals for 2 ranges in a residential home and I have a double 40 amp breaker, do I run 2 #8 runs or is there a cheaper route?

Yes there is. Sell the homeowner on the idea that gas will be a far superior way to go and then you can branch off a 15 amp circuit and supply one or two receptacles off of it to serve the controls. That will be cheaper..... for you,, not the homeowner
