208 (nameplate) motor, 240 supply

I have a building with a 120/240V open delta service. Equipment that was delivered is a new 3? packaged rooftop AC unit, and a new 3? dough mixer, both of which have a nameplate rating of 208V, not your typical 200-230.

I recommended bucking xformers to the customer which would be an extra since the prints show 208/240, but "corporate" and their " equipment supplier" are telling me they are good to go on the 240 system. Doesn't seem right to me, so I asked for documented permission from the manufacturers, which I have yet to receive.

Is there an NEC violation if these are connected to a 240V 3? system other than possibly 110.3(B)?

Is it just bad practice or am I even correct in not wanting to connect these?

IMO they're not designed to be used on the system you have or it would say so on the nameplate.

Throughout this Code, the voltage considered shall be that at which the circuit operates. The voltage rating of electrical equipment shall not be less than the nominal voltage of a circuit to which it is connected.
