How many 225 amp 208Y, 120V subpanels can I pull off of an 800 amp dist. panel fed by a 500 KVA 480 to 208Y, 120 volt transformer?

As many as you want. You need to make sure the calucated load is not greater than 800 amps but the NEC does not set limits on sub panels.
For instance I did a 400 amp service recently and I have 6 -- 200 amp panels in the install but the load does not exceed 400 amps.

Good catch I was assuming a main and he was asking about the legality of many subs under that main
