240 or 480 Single Phase

A local Farmer is wanting his service changed. He is installing new bins .
I would have to feed his current 200amp single phase panel , install 2 - 40 HP fans, 15 hp auger, 125 HP phase converter, And he plans on adding 2 more 40 hp fans next year.
Options are ???
The Power company has offered a 480 transformer single phase. Or 240 Transformer ?
We have installed phase converters and farm loads before. But always at 240.
I have never installed a 480 to 240 single phase before, Always three phase.
Could I use a 3 phase transformer? Would you go with the 480 option ?
What are the pros and cons?
 
You really have to work up costs and such to compare the voltages, but, generally speaking, the higher voltage would be more economical.

I, too, have never seen 480 1ph. If it were me, I'd do whatever I could to get 3ph in with those motor loads, and avoid the rotary converter.
