240V ice cream machine. Will it work on 208?

We are trying to hook up an ice cream machine for our open house this Thursday.
We have 208, and wonder if we should just preplan some 240V. The machine is 20 amp.

Some will, some won't, depends on the machine. (Some even have a voltage switch inside for this.)

I'd just plan on having real 240v.

ETA- I've run into soft-serve machines which appear to sense motor current as an alarm or for something in the process; change the supply voltage, change the current for a given load, change where the setpoint should be.

208V is only for vanilla, if you have chocolate and swirl, you need 240V!
