OK... Ive been looking high and low for this to no avail... I need a 3 gang 1 1/4" handy box or a 3 gang 1 inch box... anyone know where i can find something like that?

If you're asking about a 1" or 1 1/4" deep 3-gang box I would guess that there are none that are commercially available. Maybe a custom box or a change in the installation. They do make 1 1/4" deep, 4" square 1900 boxes.

If you can use a gangable (jem) box Raco makes a 1.5" deep box part # 400. Connect them together and you have a 3 gang. Other companies may have simular.
Next size up would be a gangable box at 1 5/8", but then you need a mud ring. Raco only lists a 3/4 mudring for these. Garvin has 1/2" gangable box mudrings. That would put you at 2 1/8".
Raco does make a 1" deep 1 and 2 gang bracket switch boxes.
Don't forget to upsell them dimmers.
