3 Meter stack with sub panels

Hi guys I am a newer electrical contractor. My brother just purchased a commercial building that currently has 1 200 amp meter panel using 4/0 aluminum wire that the whole building runs off of. It's a smaller building with 3 seperate spaces. We want to install a 3 stack 200 amp setup with sub panels in each office to rent them out seperatley.

Will I be able to use the 4/0 aluminum wire for a 3 stack 200 amps? And what size sub panels would be legal. It for office use the highest load is 30 amp mini split units in each space.
 
2 of the units have 6 receptacles each with 4 can lights and 2 ceiling fans. Each unit has 1 20 amp mini split

2 bathrooms have 1 light each

The largest office has 2 ceiling fans and a total of 24 receptacles 18 can lights with one 20 amp mini split.

I don't have the kilowatts at the moment
