3 phase help

Hello, good evening. I have a 3 phase 120/208 4 wire delta panel. I need to get 208 and 240v+N for an oven. To get the 208v, would I just use a single breaker on the "wild leg" (call it leg C) and then run a N? How would I get 240+N?... Wouldn't 240v just be between the other two legs? The "+N" part is throwing me for a loop... Thank you in advance to anyone who can lend a helping hand. (here is a link to a picture of my panel) :

First off, you don't have a 120/208 delta. The delta would be 240/120, and has the high leg.
The 208/120 is not a delta, and would not have a high leg.

You can't use the high leg for single ph 208V. You would have to use a straight rated breaker, probably have to be a 240V.
Plus the voltage wouldn't be a stable 208V.

Why does the oven need 208V and 240V? I never heard of something like that.

I can see why you might be confused if you don't understand the labeling.

The panel can be wired as 208/120 V wye or three wire 240 V. It is one way or the other.

I would bet the oven instructions are calling for one or the other, not both.

You must determine two distinct things:

The voltage requirements of the load. Can you show us the nameplate?

The actual characteristics of your supply. Can you make L-N measurements?

What are the actual line to line and line to neutral voltage measurements? This panel is suitable for use on 208Y/120, 240/120 4 wire delta (high leg) and 240 3 wire delta systems? Those number on the label tell you nothing about the actual supplied voltage. If you have single pole breakers on all three phases, then it is very very likely that you have a 207Y/120 volt supply.

That panel label must be very old..in the alternate wiring diagram, is shows the high leg as C phase. The oldest code book I have is the 1975 and it requires the high leg to be B phase.
