You are going to need to specify your question a bit better, since the specifics of what will happen depend upon the specifics of the installation.
Depending upon the installation, you could see anything from a protective relay shutting things down, to 1/3 of the loads shutting off, to the remaining phases carrying the full load until something fails, to the remaining phases carrying the full load with no apparent difficulty.

Once my phase-loss relay senses the dropped out phase, everything shuts off, and then end result is no load.
