200 amp 3 phase panel. Will only be used for HVAC units 100' EMT. (310.16) should I use the 3/0 thhn copper 75° column for 200 amp or can I use 90° column 2/0, commercial job?

If the feeder is protected at 200 amps the minimum you would be allowed to use is a 3/0 Cu. (unless motor feeder or tap rules apply)
The 2/0 allowance only applies to residential.
