320 amp meter base installation

I am installing a 320 amp meter base feeding 2 200 amp panels on a pedestal in Indiana. I am having a hard time understanding how to land the big wires the electric coop calls for on the 200 amp panels. The 200 amp panels I can find have a max entrance wire size of 250-300 kcmil. The wire that is called for is #350mcm or two 2/0 copper or #500mcm or two 4/0 aluminum. How do you all deal with this?
