I need to wire a machine purchased in Greece that runs on 400 V, 3 Ph, 4 W, 200 Amps. The machine is made up of several separate sections and can be fed from more than one sources. We have 480, 3 Ph in the building. What size transformer should I use and where can I get one ASAP? Would two smaller transformers be any better?

It is a common machine/application. this machine melts various resins in separate tanks, mixes them together once liquidfide , spreads the new mixture on a cooling conveyor belt and drops the new product at the other end in solid form again. similar to making chocolate kisses. runs on 50 Hz

As Jumper has noted, frequency may be an issue.
The nominal voltage and frequency in Euroland is 400V, 3ph, 50Hz.
I assume that you are in the US of A so will have 60Hz. Motors will run 20% faster and that could be both an electrical and mechanical problem.
