NEC 514.11 (A) says all conductors incldung grounded conductor shall ne provided means to open simultaneously. I understand grounded conductor is neutral however when it says all conductors do they also mean equipment grounding conductor?

Since the EGC does not carry normal circuit current, it is not considered a circuit conductor for this purpose.
That said, interrupting the EGC could only be considered legal if all power from any and all circuits using that EGC is disconnected.

How would one interrupt the equipment grounding conductor if it were the metal conduit?

I dont know perhaps install bonding jumper breaker that bonds the conduit? Not sure but good question doesnt apply to my situation.

Haha the question was rhetorical. One would never interrupt equipment grounding conductor.

Because the "grounded conductor" is a normally current carrying conductor, it can have a raised voltage over the equipment ground conductor - this increases the chance of it arcing if it touches anything at ground potential - not a good thing to have in a hazardous location environment. I believe this is why they want to have a switch in the grounded conductor in this situation. Is not so much a problem for normal operation but you do want that grounded conductor disconnected as well as the ungrounded conductors if you are going to take things apart to work on something.
