Access door behind service panel?

I'm finishing a DIY ground-mount PV install. One remaining task is to connect the wiring to the main service panel. I haven't dealt with the service panel before so I have some open questions.
First of all, I can't get to any of the knockouts because the panel is embedded in the exterior garage wall. It seems that I have to tear out a big chunk of the drywall behind the panel. Which raises a question. Do I need to put drywall back afterwards, or can I install something like a wooden access door instead, to make any future modifications easier? Anything in the codes against that?

Secondly, what's the correct way to connect the service panel to the conduit? The conduit is 1" PVC and it will terminate at a conduit body about a foot from the panel, at which point wires (8 AWG THHN) go into the wall. Do I need conduit from that point to the knockout in the panel?
