Advice on wiring steam table warmers?

Situation: new warming steam table installed by other with overhead electric warmers. All connected with flexible cord! (SJsomething if my memory is correct) from a receptacle to a switch and then the lights and warmers. Getting past the 2008 NEC code violations and probably not installing the equipment to manufacturers instructions (wish I had a copy) and they are having issues with the warmers from L and J Imports Manufacturing. I don't even know if they are a listed product.

My plan:
- Rewire with type MC and 2 new Hatco 120V 9.2A single element warmers with factory whips.
- connected to switch box for lights and master warmer switch mounted to the steam table
- and from there a flexible cord with twist lock plug end to the receptacle outlet.
 
All worked out. Once I told'em how much it was going to be to do it right, after business hours, with two workers they put it on hold and are trying to get the contractor who custom built it to pay for it, HA HA
